- 250 grams peeled and finely diced Gala apples (about 4–5 small apples)
- 50 grams dark brown sugar
- 100 grams granulated sugar
- 1 ½ teaspoons ground cinnamon
- Pinch of salt
- Juice of one small lemon
- 184 grams unsalted butter
- 1 egg
- 1 egg yolk (room temperature)
- 250 grams all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 5 grams cornstarch
- 66 grams granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Prepare the Apples: Peel and finely dice apples, and toss with dark brown sugar, ground cinnamon, salt, and lemon juice. Cook over low-medium heat for about 10 minutes until caramelized. Let cool.
- Brown the Butter: Melt butter in a pot over medium heat until golden brown. Allow it to cool.
- Combine Dry Ingredients: In a mixing bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, salt, and cornstarch. Set aside.
- Mix Wet Ingredients: In another bowl, whisk brown butter with sugars and vanilla. Add egg and yolk, then fold in chilled caramelized apples.
- Incorporate Dry Ingredients: Gradually add dry mixture to wet mixture, folding until a dough forms.
- Chill the Dough: Cover and refrigerate for 2-3 hours.
- Preheat and Prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Mix sugar and cinnamon for coating.
- Shape the Dough: Use a cookie scoop to form dough balls and roll in cinnamon-sugar mixture.
- Bake: Bake for 12-14 minutes until edges are set. Cool for 5 minutes before transferring to a wire rack.
Notes
For a vegan option, use a vegan butter substitute and replace the eggs with a flax egg.
