Description

Delightful cookies featuring caramelized Gala apples and warm cinnamon, perfect for autumn gatherings.


Ingredients

  • 250 grams peeled and finely diced Gala apples (about 45 small apples)
  • 50 grams dark brown sugar
  • 100 grams granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • Pinch of salt
  • Juice of one small lemon
  • 184 grams unsalted butter
  • 1 egg
  • 1 egg yolk (room temperature)
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 5 grams cornstarch
  • 66 grams granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Prepare the Apples: Peel and finely dice apples, and toss with dark brown sugar, ground cinnamon, salt, and lemon juice. Cook over low-medium heat for about 10 minutes until caramelized. Let cool.
  2. Brown the Butter: Melt butter in a pot over medium heat until golden brown. Allow it to cool.
  3. Combine Dry Ingredients: In a mixing bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, salt, and cornstarch. Set aside.
  4. Mix Wet Ingredients: In another bowl, whisk brown butter with sugars and vanilla. Add egg and yolk, then fold in chilled caramelized apples.
  5. Incorporate Dry Ingredients: Gradually add dry mixture to wet mixture, folding until a dough forms.
  6. Chill the Dough: Cover and refrigerate for 2-3 hours.
  7. Preheat and Prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Mix sugar and cinnamon for coating.
  8. Shape the Dough: Use a cookie scoop to form dough balls and roll in cinnamon-sugar mixture.
  9. Bake: Bake for 12-14 minutes until edges are set. Cool for 5 minutes before transferring to a wire rack.

Notes

For a vegan option, use a vegan butter substitute and replace the eggs with a flax egg.
