- 2 pounds chicken breasts
- 1 cup mango puree
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 2 tablespoons vegetable oil (for skillet) or cooking spray (for oven)
Instructions
- Preheat your oven to 400°F (200°C) if you’re opting to bake.
- Make the glaze by whisking together mango puree, soy sauce, honey, grated ginger, minced garlic, salt, and pepper.
- Marinate the chicken breasts in the bowl or a resealable bag for at least 30 minutes.
- Choose your cooking method: for baking, arrange marinated chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes; for skillet cooking, heat oil and cook chicken for about 6-7 minutes on each side.
- Glaze the chicken in the last few minutes of cooking with any remaining mango sauce.
- Serve hot and enjoy the tantalizing flavors.
Notes
For added flavor, marinate chicken overnight. Can also adapt to air frying for a quicker result.
