Description

Succulent chicken breasts marinated in a luscious mango glaze, lightly seared or baked to golden perfection, creating a tropical flavor experience.


Ingredients

  • 2 pounds chicken breasts
  • 1 cup mango puree
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil (for skillet) or cooking spray (for oven)

Instructions

  1. Preheat your oven to 400°F (200°C) if you’re opting to bake.
  2. Make the glaze by whisking together mango puree, soy sauce, honey, grated ginger, minced garlic, salt, and pepper.
  3. Marinate the chicken breasts in the bowl or a resealable bag for at least 30 minutes.
  4. Choose your cooking method: for baking, arrange marinated chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes; for skillet cooking, heat oil and cook chicken for about 6-7 minutes on each side.
  5. Glaze the chicken in the last few minutes of cooking with any remaining mango sauce.
  6. Serve hot and enjoy the tantalizing flavors.

Notes

For added flavor, marinate chicken overnight. Can also adapt to air frying for a quicker result.
