Description

An inviting breakfast favorite featuring flaky puff pastry filled with creamy spinach and eggs, perfect for any occasion.


Ingredients

  • 1 package Puff Pastry
  • 1 large Egg Wash (Beaten Egg)
  • 4 large Eggs
  • 2 cups Spinach
  • 8 oz Cream Cheese
  • 1/2 cup Parmesan Cheese
  • 1 tbsp Olive Oil
  • 1 small Shallot
  • 2 cloves Garlic
  • 1/4 tsp Nutmeg
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your baking sheet with parchment paper.
  2. In a skillet over medium heat, add olive oil, sauté shallots and garlic until fragrant (2-3 minutes), then add spinach and cook until wilted (2-4 minutes).
  3. In a bowl, mix cream cheese and Parmesan until creamy, then stir in the spinach mixture, nutmeg, salt, and pepper.
  4. Roll out the thawed puff pastry and cut it into rectangles. Fill each rectangle with spinach filling and create a well for the egg.
  5. Gently fold edges over the filling, brush with egg wash, and bake for 25-30 minutes or until golden.
  6. Let cool slightly before serving with optional toppings like Parmesan or balsamic glaze.

Notes

For best results, thaw puff pastry overnight. Customize fillings based on your preferences.
