- 1 package Puff Pastry
- 1 large Egg Wash (Beaten Egg)
- 4 large Eggs
- 2 cups Spinach
- 8 oz Cream Cheese
- 1/2 cup Parmesan Cheese
- 1 tbsp Olive Oil
- 1 small Shallot
- 2 cloves Garlic
- 1/4 tsp Nutmeg
- Salt and Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare your baking sheet with parchment paper.
- In a skillet over medium heat, add olive oil, sauté shallots and garlic until fragrant (2-3 minutes), then add spinach and cook until wilted (2-4 minutes).
- In a bowl, mix cream cheese and Parmesan until creamy, then stir in the spinach mixture, nutmeg, salt, and pepper.
- Roll out the thawed puff pastry and cut it into rectangles. Fill each rectangle with spinach filling and create a well for the egg.
- Gently fold edges over the filling, brush with egg wash, and bake for 25-30 minutes or until golden.
- Let cool slightly before serving with optional toppings like Parmesan or balsamic glaze.
Notes
For best results, thaw puff pastry overnight. Customize fillings based on your preferences.
