- 2 ripe bananas, mashed
- 1 cup blueberries (fresh or frozen)
- 1/2 cup sugar
- 1/3 cup melted butter
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Combine the mashed bananas and melted butter until smooth and creamy.
- Stir in the sugar until well incorporated.
- Add the beaten egg and vanilla extract, mixing until combined.
- Sprinkle the baking soda and salt over the mixture and fold them in.
- Gradually add the flour, stirring until mixed but avoid overmixing.
- Fold in the blueberries gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
Use overripe bananas for better sweetness and moisture. You can prepare the batter a day ahead and store it in the fridge.
