Description

A warm and cozy Banana Blueberry Muffin Bread that is soft, fluffy, and packed with sweet bananas and tart blueberries. Perfect for breakfast or as a sweet treat any time of day.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Combine the mashed bananas and melted butter until smooth and creamy.
  3. Stir in the sugar until well incorporated.
  4. Add the beaten egg and vanilla extract, mixing until combined.
  5. Sprinkle the baking soda and salt over the mixture and fold them in.
  6. Gradually add the flour, stirring until mixed but avoid overmixing.
  7. Fold in the blueberries gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Use overripe bananas for better sweetness and moisture. You can prepare the batter a day ahead and store it in the fridge.
