Description

A delightful twist on a classic breakfast, combining fragrant rice, crunchy vegetables, and creamy eggs into a satisfying dish.


Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet over medium heat until it shimmers lightly.
  2. Add the mixed vegetables to the skillet and sauté for about 3-4 minutes.
  3. Push the sautéed vegetables to one side, crack the eggs into the open space, and scramble them gently.
  4. Add the cooked rice to the skillet, pouring the soy sauce over the top.
  5. Mix everything together thoroughly for about 3-5 minutes.
  6. Season generously with salt and pepper, tasting as you go.
  7. Stir in the chopped green onions just before serving.

Notes

Use day-old rice for the best texture. Avoid using fresh rice as it can become mushy. Customize by adding proteins like chicken or shrimp.
