Instructions
- Heat the sesame oil in a large skillet over medium heat until it shimmers lightly.
- Add the mixed vegetables to the skillet and sauté for about 3-4 minutes.
- Push the sautéed vegetables to one side, crack the eggs into the open space, and scramble them gently.
- Add the cooked rice to the skillet, pouring the soy sauce over the top.
- Mix everything together thoroughly for about 3-5 minutes.
- Season generously with salt and pepper, tasting as you go.
- Stir in the chopped green onions just before serving.
