A delicious and easy-to-make Chicken Fajita Casserole that combines all the flavors of traditional fajitas in a comforting baked dish.

- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 tablespoon fajita seasoning
- 6 tortillas, cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, bell pepper, onion, black beans, corn, salsa, fajita seasoning, and half of the cheese.
- In a greased baking dish, layer half of the tortilla strips on the bottom.
- Spread the chicken mixture over the tortilla layer.
- Top with the remaining tortilla strips and the rest of the cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to customize the vegetables based on your preference.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Serve with sour cream, guacamole, or fresh cilantro for added flavor.
