Description

A delicious and easy-to-make Chicken Fajita Casserole that combines all the flavors of traditional fajitas in a comforting baked dish.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon fajita seasoning
  • 6 tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, bell pepper, onion, black beans, corn, salsa, fajita seasoning, and half of the cheese.
  3. In a greased baking dish, layer half of the tortilla strips on the bottom.
  4. Spread the chicken mixture over the tortilla layer.
  5. Top with the remaining tortilla strips and the rest of the cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
