A flavorful and aromatic Chicken Shawarma recipe with marinated chicken thighs, garlic sauce, and fresh vegetables, all wrapped in warm pita.

- 1 lb chicken thighs, boneless and skinless
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
- Tortillas or pita bread for serving
- 1/2 cup mayonnaise (for garlic sauce)
- 2 cloves garlic, minced (for garlic sauce)
- 1 tbsp lemon juice (for garlic sauce)
Instructions
- In a large mixing bowl, combine olive oil, minced garlic, cumin, paprika, turmeric, coriander, cayenne, salt, and pepper. Stir until well blended.
- Add the chicken thighs to the marinade, coating them thoroughly. Cover and refrigerate for at least 1 hour, ideally overnight.
- Preheat a grill or skillet over medium-high heat.
- Cook the marinated chicken for 7-8 minutes on each side until browned and cooked through.
- Let the chicken rest for a few minutes, then slice thinly.
- Mix mayonnaise, minced garlic, and lemon juice in a bowl to create the garlic sauce.
- Serve the chicken in warm tortillas or pita bread, drizzled with garlic sauce and topped with fresh vegetables.
Notes
For added flavor, marinate the chicken overnight. You can also use chicken breast instead of thighs for a leaner option.
