Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix chocolate cookie crumbs with melted butter until well combined.
- Press the mixture into the bottom of mini cheesecake pans to form the crust.
- In a separate bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the whipped cream and cocoa powder gently until fully incorporated.
- Pour the cheesecake mixture over the crusts in the mini pans.
- Bake for 20-25 minutes or until set.
- Let cool, then refrigerate for at least 4 hours before serving.
- Decorate with chocolate gnome decorations if desired.
