Description

A rich and creamy cheesecake featuring a delightful swirl of chocolate and strawberry puree, perfect for any celebration.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup melted dark chocolate
  • 1 cup fresh strawberries, pureed
  • ¼ cup granulated sugar (for strawberry swirl)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cookie crumbs, melted butter, and sugar in a mixing bowl. Mix until combined and press into the bottom of a greased springform pan. Bake for 10 minutes.
  3. Beat the cream cheese with a mixer until creamy and smooth. Gradually add the sugar, mixing until fluffy. Add eggs one at a time, mixing until incorporated. Stir in sour cream and melted dark chocolate until fully combined.
  4. Prepare the strawberry puree by blending fresh strawberries, sugar, and lemon juice until smooth.
  5. Pour the chocolate filling over the cooled crust. Dollop spoonfuls of strawberry puree onto the surface and swirl gently with a knife.
  6. Bake the cheesecake for 50-60 minutes or until the edges set and the center jiggles slightly.
  7. Cool in the oven with the door ajar for an hour, then chill in the refrigerator for at least four hours, preferably overnight.
