- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 cup melted dark chocolate
- 1 cup fresh strawberries, pureed
- ¼ cup granulated sugar (for strawberry swirl)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Combine cookie crumbs, melted butter, and sugar in a mixing bowl. Mix until combined and press into the bottom of a greased springform pan. Bake for 10 minutes.
- Beat the cream cheese with a mixer until creamy and smooth. Gradually add the sugar, mixing until fluffy. Add eggs one at a time, mixing until incorporated. Stir in sour cream and melted dark chocolate until fully combined.
- Prepare the strawberry puree by blending fresh strawberries, sugar, and lemon juice until smooth.
- Pour the chocolate filling over the cooled crust. Dollop spoonfuls of strawberry puree onto the surface and swirl gently with a knife.
- Bake the cheesecake for 50-60 minutes or until the edges set and the center jiggles slightly.
- Cool in the oven with the door ajar for an hour, then chill in the refrigerator for at least four hours, preferably overnight.
