A delicious and flavorful copycat recipe of Popeye’s famous Cajun Rice, perfect for a side dish or a main meal.

- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup green onions, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion and bell pepper, and sauté until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the rice to the pot and stir to coat with the oil and vegetables.
- Pour in the chicken broth, Cajun seasoning, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and fluff the rice with a fork.
- Stir in the chopped green onions before serving.
Notes
- For a spicier version, add diced jalapeños or increase the Cajun seasoning.
- This dish pairs well with fried chicken or seafood.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
