Description

A delicious and flavorful copycat recipe of Popeye’s famous Cajun Rice, perfect for a side dish or a main meal.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup green onions, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the diced onion and bell pepper, and sauté until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the rice to the pot and stir to coat with the oil and vegetables.
  5. Pour in the chicken broth, Cajun seasoning, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and fluff the rice with a fork.
  9. Stir in the chopped green onions before serving.

Notes

  • For a spicier version, add diced jalapeños or increase the Cajun seasoning.
