Instructions
- Prepare the Chicken: Slice the chicken breasts in half horizontally to create thinner cutlets.
- Season and Dredge: Season chicken with salt and pepper, then dredge in flour, shaking off excess.
- Heat the Skillet: Heat olive oil and butter in a large skillet over medium heat until butter froths.
- Cook the Chicken: Add chicken to the skillet and cook until golden brown on both sides, about 4 minutes per side.
- Create the Sauce: Remove chicken and add chicken broth, white wine (or extra broth), and lemon juice to the skillet, scraping browned bits.
- Bring It All Together: Return chicken to the skillet and let simmer for 5 minutes to soak in flavors.
- Serve and Garnish: Sprinkle with chopped parsley before serving.
