Description

Creamy Cowboy Casserole is a hearty and comforting dish that combines ground beef, creamy sauce, and a medley of vegetables, topped with crispy tater tots.


Ingredients

  • 1 lb ground beef
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 package tater tots (32 oz)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  3. Add the cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper to the beef. Stir until well combined.
  4. Fold in the frozen mixed vegetables and half of the cheddar cheese.
  5. Transfer the beef mixture to a greased 9×13 inch baking dish.
  6. Top with tater tots in a single layer.
  7. Bake in the preheated oven for 30 minutes.
  8. Remove from the oven and sprinkle the remaining cheddar cheese on top.
  9. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Let cool for a few minutes before serving.

Notes

  • Feel free to substitute ground turkey or chicken for a lighter option.
  • For a spicier version, add diced jalapeños or hot sauce.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
