- 1 lb ground beef
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables
- 1 package tater tots (32 oz)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper to the beef. Stir until well combined.
- Fold in the frozen mixed vegetables and half of the cheddar cheese.
- Transfer the beef mixture to a greased 9×13 inch baking dish.
- Top with tater tots in a single layer.
- Bake in the preheated oven for 30 minutes.
- Remove from the oven and sprinkle the remaining cheddar cheese on top.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to substitute ground turkey or chicken for a lighter option.
- For a spicier version, add diced jalapeños or hot sauce.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
