- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces.
- Heat oil in a heavy-bottomed skillet over medium-high heat and add chicken, cooking for 5-7 minutes until browned.
- Lower heat and add cream cheese and chicken broth, stirring until smooth.
- Add gnocchi and spinach, cover, and simmer for 5-7 minutes.
- Stir in shredded cheddar cheese until melted and serve hot.
Notes
Use rotisserie chicken for a quicker option. This dish can be stored for up to 3 days in an airtight container.
