Description

A delightful and creamy chicken gnocchi dish that combines rich flavors and comforting textures.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces.
  2. Heat oil in a heavy-bottomed skillet over medium-high heat and add chicken, cooking for 5-7 minutes until browned.
  3. Lower heat and add cream cheese and chicken broth, stirring until smooth.
  4. Add gnocchi and spinach, cover, and simmer for 5-7 minutes.
  5. Stir in shredded cheddar cheese until melted and serve hot.

Notes

Use rotisserie chicken for a quicker option. This dish can be stored for up to 3 days in an airtight container.
