Description

A delightful fusion of crispy pitas filled with savory chicken, creamy feta, and fresh herbs, perfect for any occasion.


Ingredients

  • 500 g Chicken Mince
  • 150 g Feta Cheese, crumbled
  • 1 medium Red Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 2 tbsp Fresh Mint, chopped
  • 2 tbsp Fresh Parsley, chopped
  • 3 tbsp Olive Oil
  • 4 pieces Pita Bread

Instructions

  1. In a large mixing bowl, combine chicken mince, red onion, minced garlic, lemon juice, lemon zest, mint, parsley, and crumbled feta cheese. Mix thoroughly.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Spoon the chicken mixture into the pan and cook for 5-7 minutes until fully cooked.
  3. Cut each pita in half to create pockets and gently open them.
  4. Fill each pita half with the chicken and feta mixture, pressing gently to secure.
  5. In the same skillet, add the remaining 2 tablespoons of olive oil and heat over medium-high heat. Place the stuffed pitas seam-side down and fry for 3-4 minutes on each side until golden and crispy.
  6. Transfer the crispy pitas to a plate and serve with a dipping sauce or salad.

Notes

Make-ahead tips: Prepare the filling in advance and refrigerate. Consider using an air fryer for a healthier twist.
