- 500 g Chicken Mince
- 150 g Feta Cheese, crumbled
- 1 medium Red Onion, finely chopped
- 2 cloves Garlic, minced
- 1 tbsp Lemon Juice
- 1 tsp Lemon Zest
- 2 tbsp Fresh Mint, chopped
- 2 tbsp Fresh Parsley, chopped
- 3 tbsp Olive Oil
- 4 pieces Pita Bread
Instructions
- In a large mixing bowl, combine chicken mince, red onion, minced garlic, lemon juice, lemon zest, mint, parsley, and crumbled feta cheese. Mix thoroughly.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Spoon the chicken mixture into the pan and cook for 5-7 minutes until fully cooked.
- Cut each pita in half to create pockets and gently open them.
- Fill each pita half with the chicken and feta mixture, pressing gently to secure.
- In the same skillet, add the remaining 2 tablespoons of olive oil and heat over medium-high heat. Place the stuffed pitas seam-side down and fry for 3-4 minutes on each side until golden and crispy.
- Transfer the crispy pitas to a plate and serve with a dipping sauce or salad.
Notes
Make-ahead tips: Prepare the filling in advance and refrigerate. Consider using an air fryer for a healthier twist.
