Description

Crispy chicken strips coated with toasted coconut and breadcrumbs, delivering a delightful crunch and juicy flavor.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 1 cup shredded coconut
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Cooking spray or oil for baking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In one bowl, combine flour, salt, pepper, garlic powder, and paprika.
  3. In a second bowl, beat the eggs.
  4. In a third bowl, combine shredded coconut and breadcrumbs.
  5. Dredge each chicken strip: coat in flour mixture, dip in eggs, then coat in coconut and breadcrumb mixture.
  6. Arrange coated strips on a baking sheet sprayed with cooking spray.
  7. Bake for 15-20 minutes until golden brown and cooked through.

Notes

Allow chicken to rest for a few minutes post-baking for a better texture. Squeeze fresh lime over the chicken before serving for added brightness.
