- 1 lb chicken breast, cut into strips
- 1 cup shredded coconut
- 1 cup breadcrumbs
- 1/2 cup flour
- 2 eggs, beaten
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Cooking spray or oil for baking
Instructions
- Preheat the oven to 400°F (200°C).
- In one bowl, combine flour, salt, pepper, garlic powder, and paprika.
- In a second bowl, beat the eggs.
- In a third bowl, combine shredded coconut and breadcrumbs.
- Dredge each chicken strip: coat in flour mixture, dip in eggs, then coat in coconut and breadcrumb mixture.
- Arrange coated strips on a baking sheet sprayed with cooking spray.
- Bake for 15-20 minutes until golden brown and cooked through.
Notes
Allow chicken to rest for a few minutes post-baking for a better texture. Squeeze fresh lime over the chicken before serving for added brightness.
