Description

Crunchy Cowboy Casserole is a hearty and delicious dish that combines ground beef, beans, and crunchy toppings for a satisfying meal.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 1 cup shredded cheese
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
  4. In a baking dish, layer the beef mixture, followed by the crushed tortilla chips.
  5. Sprinkle shredded cheese on top of the tortilla chips.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a few minutes before serving with sour cream on the side.
