- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 2 cups crushed tortilla chips
- 1 cup shredded cheese
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat until fully cooked.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
- In a baking dish, layer the beef mixture, followed by the crushed tortilla chips.
- Sprinkle shredded cheese on top of the tortilla chips.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving with sour cream on the side.
