Description

Ingredients

  • 1 1/2 cups Chocolate Graham Crackers (finely crushed)
  • 6 tablespoons Unsalted Butter (melted)
  • 32 ounces Cream Cheese (softened)
  • 1 1/4 cups Granulated Sugar
  • 1/4 cup Unsweetened Cocoa Powder
  • 4 large Eggs
  • 1 cup Sour Cream
  • 6 ounces Dark Chocolate (melted)
  • 1/2 cup Raspberry Jam

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by pressing the crushed graham crackers mixed with melted butter firmly into the bottom.
  2. In a separate bowl, beat the cream cheese and sugar until smooth, then mix in the cocoa powder.
  3. Add the eggs one at a time, beating well after each addition. Fold in sour cream and melted dark chocolate.
  4. Swirl in raspberry jam into the batter and pour over the crust.
  5. Bake for 55-65 minutes, until edges are set but center is slightly jiggly. Cool in the oven with the door ajar for an hour.
  6. Once cooled, refrigerate for at least 4 hours or overnight before serving.
