A creamy and crunchy pasta salad featuring crispy bacon, zesty pickles, and fresh cucumbers, perfect for picnics and barbecues.

- 1 cup Mayonnaise
- 1/2 cup Sour Cream
- 1/4 cup Pickle Brine
- 1 tablespoon Yellow Mustard
- 1 teaspoon Kosher Salt
- 1 teaspoon Sugar
- 8 slices Bacon
- 8 ounces Short Pasta
- 1 cup Pickles
- 1 cup Mini Cucumbers
- 1 cup Mild Cheese
- 1/2 cup Red Onions
- 1/4 cup Fresh Dill
- Salt and Pepper to taste
Instructions
- Cook your pasta. Bring a large pot of salted water to boiling and add the short pasta. Cook according to package instructions until al dente. Drain in a colander and rinse under cold water.
- Prepare the bacon. While the pasta cooks, fry the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess grease and chop into bite-sized pieces.
- Mix the dressing. In a large mixing bowl, whisk together mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, sugar, and a little pepper. Taste and adjust seasonings.
- Combine the ingredients. Add the cooled pasta, crispy bacon, pickles, mini cucumbers, mild cheese, red onions, and fresh dill to the dressing. Fold everything together.
- Chill out. Cover the salad and refrigerate for at least an hour.
- Serve and enjoy. Stir and taste one last time before serving.

Make-ahead tip: Prepare a day in advance, adding cucumbers just before serving for maximum crunch.
