Description

A comforting breakfast of crispy tortillas filled with fried eggs, black beans, salsa, and avocado.


Ingredients

Scale
  • 4 corn tortillas
  • 4 large eggs
  • 1 cup cooked black beans
  • 1 cup salsa
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Hot sauce, to taste
  • Salt and pepper, to taste

Instructions

  1. Heat a non-stick skillet over medium heat and warm the tortillas for 30 seconds on each side.
  2. In the same skillet, fry the eggs to your liking.
  3. Place a warm tortilla on each plate, add a spoonful of black beans, and top with a fried egg.
  4. Add salsa and arrange avocado slices on top.
  5. Season with salt, pepper, and garnish with cilantro. Drizzle with hot sauce if desired. Serve immediately.

Notes

Preparation can take place the night before. Avocado can be coated in lemon juice to prevent browning.
