  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the beef roast with salt and pepper, then sear it on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add sliced onions and cook until caramelized.
  5. Add minced garlic and thyme, cooking for an additional minute.
  6. Pour in the beef broth and French onion soup, stirring to combine.
  7. Return the roast to the pot, cover, and transfer to the oven.
  8. Bake for 3-4 hours, or until the meat is tender and easily shredded.
