Description

Ingredients

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cherries, pitted
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan, melt the butter over medium heat, then stir in the sugar until well combined.
  3. Remove from heat and let cool slightly, then whisk in the eggs and vanilla extract.
  4. In a separate bowl, mix together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the cherries gently.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. While the brownies are baking, prepare the ganache by heating the heavy cream in a saucepan until just simmering.
  10. Pour the hot cream over the chopped dark chocolate and let sit for a few minutes, then stir until smooth.
  11. Once the brownies are done, let them cool completely before pouring the ganache over the top.
  12. Allow the ganache to set before slicing into squares and serving.
