- 1 cup orzo pasta
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken or vegetable broth
- 1 tablespoon lemon juice
Instructions
- Cook the orzo pasta according to package instructions until al dente.
- In the last 2 minutes of cooking, add the broccoli florets to the pot.
- Drain the orzo and broccoli, then return them to the pot.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the garlic to the orzo and broccoli mixture.
- Stir in the Parmesan cheese, salt, pepper, broth, and lemon juice until well combined.
- Serve warm and enjoy!
Notes
- For a vegetarian option, use vegetable broth instead of chicken broth.
- Feel free to add more vegetables like spinach or peas for extra nutrition.
