Description
These Make Ahead Mashed Potatoes are irresistibly creamy and fluffy, perfect for holiday gatherings or cozy dinners anytime.
Ingredients
Scale
- 2 pounds russet potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup unsalted butter
- Salt and pepper to taste
- 1/4 cup chopped chives (optional)
Instructions
- Peel the potatoes and chop them into roughly equal chunks to ensure they cook evenly.
- Place the chopped potatoes in a large pot, add enough salted water to cover them, and bring to a boil. Let them simmer until fork-tender, about 15-20 minutes.
- Carefully drain the cooked potatoes using a colander, then return them to the pot. Allow them a moment to cool slightly and release steam.
- Stir in the sour cream, milk, butter, salt, and pepper. Use a potato masher or mixer to mash the potatoes until they reach your desired creaminess.
- Pour the creamy mashed potatoes into a greased baking dish, smoothing the surface.
- Cover with plastic wrap and refrigerate until you’re ready to bake.
- Preheat your oven to 350°F (175°C). Remove the cover and place in the oven, baking for 30 minutes, or until heated through.
- Sprinkle chopped chives on top just before serving for a fresh burst of flavor.
Notes
Make these potatoes ahead of time for convenience. They can be stored in the refrigerator for up to 4 days or frozen for up to 2 months.
