Description

These Make Ahead Mashed Potatoes are irresistibly creamy and fluffy, perfect for holiday gatherings or cozy dinners anytime.


Ingredients

  • 2 pounds russet potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • Salt and pepper to taste
  • 1/4 cup chopped chives (optional)

Instructions

  1. Peel the potatoes and chop them into roughly equal chunks to ensure they cook evenly.
  2. Place the chopped potatoes in a large pot, add enough salted water to cover them, and bring to a boil. Let them simmer until fork-tender, about 15-20 minutes.
  3. Carefully drain the cooked potatoes using a colander, then return them to the pot. Allow them a moment to cool slightly and release steam.
  4. Stir in the sour cream, milk, butter, salt, and pepper. Use a potato masher or mixer to mash the potatoes until they reach your desired creaminess.
  5. Pour the creamy mashed potatoes into a greased baking dish, smoothing the surface.
  6. Cover with plastic wrap and refrigerate until you’re ready to bake.
  7. Preheat your oven to 350°F (175°C). Remove the cover and place in the oven, baking for 30 minutes, or until heated through.
  8. Sprinkle chopped chives on top just before serving for a fresh burst of flavor.
