Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 medium apples, diced
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of cupcake liners in a muffin tin.
  4. Bake for 5-7 minutes, then let cool.
  5. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  6. In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  7. Fill the cooled crusts with the cheesecake mixture.
  8. Top with diced apples and drizzle with caramel sauce.
  9. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a richer flavor, use brown sugar instead of white sugar in the crust.
  • Feel free to add nuts for extra crunch.
  • These can be made a day in advance for convenience.
