Description

Ingredients

  • 1 cup chocolate cookie crumbs
  • 4 tablespoons unsalted butter, melted
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon peppermint extract
  • 1/4 cup powdered sugar
  • Whipped cream for topping
  • Crushed peppermint candies for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of mini pie tins to form the crust.
  4. Bake the crusts for 5-7 minutes, then let them cool.
  5. In a saucepan, heat heavy cream until it begins to simmer.
  6. Remove from heat and add chocolate chips, stirring until melted and smooth.
  7. Stir in peppermint extract and powdered sugar until well combined.
  8. Pour the chocolate mixture into the cooled crusts and refrigerate for at least 2 hours to set.
