- 1 cup chocolate cookie crumbs
- 4 tablespoons unsalted butter, melted
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon peppermint extract
- 1/4 cup powdered sugar
- Whipped cream for topping
- Crushed peppermint candies for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix chocolate cookie crumbs with melted butter until well combined.
- Press the mixture into the bottom of mini pie tins to form the crust.
- Bake the crusts for 5-7 minutes, then let them cool.
- In a saucepan, heat heavy cream until it begins to simmer.
- Remove from heat and add chocolate chips, stirring until melted and smooth.
- Stir in peppermint extract and powdered sugar until well combined.
- Pour the chocolate mixture into the cooled crusts and refrigerate for at least 2 hours to set.
- Top with whipped cream and crushed peppermint candies before serving.
Notes
- For a stronger peppermint flavor, increase the amount of peppermint extract.
- These pies can be made a day in advance and stored in the refrigerator.
