Ingredients

- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1 egg yolk
- 1/2 cup dark chocolate, chopped
- 1/2 cup heavy cream
- 1 cup fresh raspberries
- Mint leaves for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, and powdered sugar.
- Add softened butter and egg yolk, and mix until a dough forms.
- Press the dough into mini tartlet pans and bake for 10-12 minutes.
- In a saucepan, heat heavy cream until just boiling, then pour over chopped chocolate and stir until smooth.
- Fill the cooled tartlet shells with the chocolate ganache.
- Top with fresh raspberries.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with mint leaves if desired.

- Ensure the tartlet shells are completely cooled before adding the ganache.
