A delicious twist on traditional meatloaf, this Mozzarella-Stuffed Chicken Meatloaf is packed with flavor and gooey cheese.

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper.
- Mix until well combined.
- On a baking sheet, shape the mixture into a loaf.
- Make a well in the center of the meatloaf and fill it with mozzarella cheese.
- Cover the cheese with the remaining meat mixture.
- Spread marinara sauce on top of the meatloaf.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing.
Notes
- For extra flavor, add chopped spinach or bell peppers to the meat mixture.
- Serve with a side of vegetables or a salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
