Description

A delicious twist on traditional meatloaf, this Mozzarella-Stuffed Chicken Meatloaf is packed with flavor and gooey cheese.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper.
  3. Mix until well combined.
  4. On a baking sheet, shape the mixture into a loaf.
  5. Make a well in the center of the meatloaf and fill it with mozzarella cheese.
  6. Cover the cheese with the remaining meat mixture.
  7. Spread marinara sauce on top of the meatloaf.
  8. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  9. Let it rest for 10 minutes before slicing.

Notes

  • For extra flavor, add chopped spinach or bell peppers to the meat mixture.
  • Serve with a side of vegetables or a salad for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
