- 1 cup pumpkin puree
- 1/2 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 cup whipped topping
- 1 package graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup chopped pecans (optional)
Instructions
- In a mixing bowl, combine pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.
- Fold in the whipped topping gently until well combined.
- In another bowl, mix graham cracker crumbs with melted butter until crumbly.
- In serving cups, layer the graham cracker mixture at the bottom.
- Top with the pumpkin mixture, filling each cup to the top.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with chopped pecans if desired before serving.
Notes
- Make sure to use pure pumpkin puree, not pumpkin pie filling.
- These cups can be made a day in advance for convenience.
- Feel free to adjust the sweetness according to your taste.
