Soft and gooey peanut butter cookies loaded with mini marshmallows for a delightful treat.
Ingredients

- 1 cup creamy peanut butter
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 cup mini marshmallows
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a mixing bowl.
- Mix until smooth and velvety.
- Fold in the mini marshmallows gently.
- Drop rounded tablespoons of dough onto a lined baking sheet.
- Bake for 10-12 minutes until the edges are golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
Notes
For a vegan option, use a flax egg. You can also chill the dough in the fridge for up to 24 hours before baking.
