- 4 pork chops
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 can cream of mushroom soup
- 1 cup frozen mixed vegetables
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and brown the pork chops on both sides.
- In a large casserole dish, combine rice, chicken broth, cream of mushroom soup, chopped onion, and mixed vegetables.
- Place the browned pork chops on top of the rice mixture.
- Season with salt and pepper.
- Cover the casserole dish with aluminum foil and bake for 1 hour.
- Remove the foil and bake for an additional 15 minutes until the pork is cooked through and the rice is tender.
