Description

Deliciously creamy raspberry white chocolate cheesecake bites that are perfect for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup white chocolate chips
  • 1/2 cup fresh raspberries
  • 1 tsp vanilla extract
  • 1/2 cup graham cracker crumbs
  • 2 tbsp butter, melted

Instructions

  1. In a mixing bowl, combine the softened cream cheese and powdered sugar until smooth.
  2. Melt the white chocolate chips in a microwave or double boiler, then mix into the cream cheese mixture.
  3. Add the vanilla extract and gently fold in the fresh raspberries.
  4. In another bowl, mix the graham cracker crumbs with melted butter until well combined.
  5. Press the graham cracker mixture into the bottom of a lined mini muffin tin.
  6. Fill each cup with the cheesecake mixture and smooth the tops.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a stronger raspberry flavor, you can add raspberry puree to the cheesecake mixture.
  • These bites can be stored in an airtight container in the fridge for up to 5 days.
  • Feel free to substitute with other berries if desired.
