Deliciously creamy raspberry white chocolate cheesecake bites that are perfect for any occasion.

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup white chocolate chips
- 1/2 cup fresh raspberries
- 1 tsp vanilla extract
- 1/2 cup graham cracker crumbs
- 2 tbsp butter, melted
Instructions
- In a mixing bowl, combine the softened cream cheese and powdered sugar until smooth.
- Melt the white chocolate chips in a microwave or double boiler, then mix into the cream cheese mixture.
- Add the vanilla extract and gently fold in the fresh raspberries.
- In another bowl, mix the graham cracker crumbs with melted butter until well combined.
- Press the graham cracker mixture into the bottom of a lined mini muffin tin.
- Fill each cup with the cheesecake mixture and smooth the tops.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a stronger raspberry flavor, you can add raspberry puree to the cheesecake mixture.
- These bites can be stored in an airtight container in the fridge for up to 5 days.
- Feel free to substitute with other berries if desired.
