Description

Crispy, golden-brown balls filled with tender corned beef, zesty sauerkraut, and creamy Swiss cheese, served with a spicy Thousand Island dipping sauce.


Ingredients

  • 1 cup cooked corned beef, chopped
  • 1 cup sauerkraut, drained and chopped
  • 1 cup mashed potatoes
  • 1 cup shredded Swiss cheese
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Mix the chopped corned beef, sauerkraut, mashed potatoes, shredded Swiss cheese, and a sprinkle of salt and pepper in a large bowl until well combined.
  2. Form the mixture into golf ball-sized balls, ensuring they are compact for frying.
  3. Dip each ball in the beaten eggs, coating fully, then roll in breadcrumbs.
  4. Heat oil in a frying pan over medium heat until shimmering.
  5. Fry the balls in batches for about 3 to 5 minutes, turning occasionally, until golden brown.
  6. Drain the fried balls on paper towels to remove excess oil.
  7. Whisk together mayonnaise, ketchup, horseradish sauce, and hot sauce in a bowl to make the dipping sauce.
  8. Serve hot with the spicy Thousand Island dipping sauce on the side.

Notes

You can prepare the mixture a day in advance and chill it until ready to fry. Alternatives include baking or air frying.
