Description

Savory Reuben Balls, combining corned beef, sauerkraut, and Swiss cheese, all fried to golden perfection, served with a zesty Thousand Island dip.


Ingredients

  • 1 cup chopped corned beef
  • 1 cup drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 4 oz cream cheese, softened
  • 1 cup rye breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Vegetable oil for frying or spray for air frying
  • For the Spicy Thousand Island Dipping Sauce:
  • 0.5 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon hot sauce
  • 1 tablespoon sweet relish
  • 0.25 teaspoon smoked paprika
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the chopped corned beef, drained sauerkraut, shredded Swiss cheese, softened cream cheese, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  2. Form the mixture into walnut-sized balls and arrange them on a baking sheet. Chill in the refrigerator for at least 30 minutes.
  3. Set up three bowls: one with flour, another with beaten eggs, and the last with rye breadcrumbs. Optionally season the breadcrumbs with garlic or onion powder.
  4. Dredge each chilled ball in flour, dip it in beaten eggs, then roll in the rye breadcrumbs until fully coated.
  5. Heat oil in a skillet or deep fryer to 350°F (175°C). Fry the balls in batches for 3-4 minutes until golden brown, then drain on paper towels. Alternatively, air fry at 400°F (200°C) for about 10 minutes, flipping halfway.
  6. For the dipping sauce, whisk together mayonnaise, ketchup, horseradish, hot sauce, sweet relish, smoked paprika, and salt in a small bowl and chill until ready to serve.

Notes

These snacks are perfect for gatherings, game days, or cozy dinners. Great make-ahead option: prepare the filling and refrigerate for up to 24 hours.
