Description

A delicious and easy recipe for Slow Cooker Garlic Butter Beef with Potatoes, perfect for a comforting meal.


Ingredients

  • 2 lbs beef chuck roast
  • 4 medium potatoes, diced
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Place the diced potatoes in the bottom of the slow cooker.
  2. Season the beef chuck roast with salt and pepper, then place it on top of the potatoes.
  3. In a saucepan, melt the butter over medium heat and add the minced garlic and chopped onion. Sauté until fragrant.
  4. Pour the garlic butter mixture over the beef and potatoes.
  5. Add the beef broth, thyme, and rosemary to the slow cooker.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  7. Once cooked, shred the beef and mix it with the potatoes and sauce before serving.
