- 2 lbs beef chuck roast
- 4 medium potatoes, diced
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon Worcestershire sauce
Instructions
- Place the diced potatoes at the bottom of the slow cooker.
- Season the beef chuck roast with salt, pepper, thyme, and rosemary.
- In a skillet, melt the butter and sauté the minced garlic until fragrant.
- Pour the garlic butter over the beef in the slow cooker.
- Add the beef broth and Worcestershire sauce to the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For extra flavor, sear the beef in a skillet before adding it to the slow cooker.
- Feel free to add other vegetables like carrots or onions.
