Description

A delicious and hearty slow cooker recipe featuring tender beef cooked in garlic butter with potatoes.


Ingredients

  • 2 lbs beef chuck roast
  • 4 medium potatoes, diced
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Place the diced potatoes at the bottom of the slow cooker.
  2. Season the beef chuck roast with salt, pepper, thyme, and rosemary.
  3. In a skillet, melt the butter and sauté the minced garlic until fragrant.
  4. Pour the garlic butter over the beef in the slow cooker.
  5. Add the beef broth and Worcestershire sauce to the slow cooker.
  6. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  7. Serve hot, garnished with fresh herbs if desired.
