Description

A creamy and spicy soup that combines the flavors of jalapeño poppers and tender chicken for a comforting meal.

Ingredients

Scale
  • 1 pound cooked chicken breast, shredded
  • 4 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup jalapeños, diced
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add diced onion and sauté until translucent.
  2. Add garlic and jalapeños, cooking until fragrant.
  3. Pour in the chicken broth and bring to a gentle simmer.
  4. Incorporate the shredded chicken and cream cheese, stirring until smooth.
  5. Mix in the cheddar cheese, stirring until melted.
  6. Season with salt and pepper, then simmer for 10-15 minutes.
  7. Serve hot, garnished with additional jalapeños or cheese if desired.

Notes

Make-Ahead: This soup stores well. Consider doubling the recipe for leftovers. To customize, swap jalapeños with bell peppers for less heat.
