Description

A flavorful chowder infused with spicy chorizo and tender shrimp, combined with sweet corn and a creamy coconut base for a warm, hearty meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb chorizo, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can coconut milk
  • 2 cups vegetable or chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 potato, diced
  • 12 teaspoons chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the diced chorizo over medium heat until golden brown, about 4-5 minutes.
  2. Add chopped onion and garlic; sauté for another 3-4 minutes until the onion is translucent.
  3. Stir in diced potato and corn; cook for 2-3 minutes.
  4. Pour in vegetable or chicken broth and bring to a gentle simmer.
  5. Reduce heat to low and add coconut milk. Fold in shrimp and cook for 3-5 minutes until pink.
  6. Season with chili powder, salt, and pepper to taste. Serve hot, garnished with fresh cilantro.

Notes

Chowder tastes even better the next day. Can be made in an Instant Pot for quicker cooking.
