- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 3 vanilla beans (seeds only) or 1 teaspoon vanilla extract
- 4 large egg yolks
- 3 tablespoons unsalted butter
Instructions
- Prepare the strawberries: Start by placing your sliced strawberries in a food processor or blender. Puree until smooth.
- Strain the mixture: Pour the strawberry puree through a fine mesh strainer into a medium bowl.
- Combine ingredients: In a medium saucepan over low-medium heat, whisk together the sugar and cornstarch until well blended.
- Pour in the smooth strawberry puree, vanilla bean seeds, and fresh lemon juice.
- Add egg yolks: While whisking, incorporate the egg yolks into the mixture.
- Heat to thicken: Increase heat to medium and bring to a gentle boil, whisking constantly.
- Incorporate butter: Remove from heat and whisk in the unsalted butter until melted.
- Chill the curd: Place plastic wrap directly onto the warm curd and chill in the refrigerator for 6-8 hours.
- Serve and enjoy: Use as a spread, dip, or in other delightful recipes.
Notes
Strawberry curd keeps beautifully in the fridge for up to two weeks. You can experiment with cooking it in an air fryer or oven.
