Description

A delicious and vibrant strawberry curd, perfect for spreading or using in desserts.


Ingredients

  • 3 cups sliced fresh strawberries
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 3 vanilla beans (seeds only) or 1 teaspoon vanilla extract
  • 4 large egg yolks
  • 3 tablespoons unsalted butter

Instructions

  1. Prepare the strawberries: Start by placing your sliced strawberries in a food processor or blender. Puree until smooth.
  2. Strain the mixture: Pour the strawberry puree through a fine mesh strainer into a medium bowl.
  3. Combine ingredients: In a medium saucepan over low-medium heat, whisk together the sugar and cornstarch until well blended.
  4. Pour in the smooth strawberry puree, vanilla bean seeds, and fresh lemon juice.
  5. Add egg yolks: While whisking, incorporate the egg yolks into the mixture.
  6. Heat to thicken: Increase heat to medium and bring to a gentle boil, whisking constantly.
  7. Incorporate butter: Remove from heat and whisk in the unsalted butter until melted.
  8. Chill the curd: Place plastic wrap directly onto the warm curd and chill in the refrigerator for 6-8 hours.
  9. Serve and enjoy: Use as a spread, dip, or in other delightful recipes.

Notes

Strawberry curd keeps beautifully in the fridge for up to two weeks. You can experiment with cooking it in an air fryer or oven.
