- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- 1 egg (for egg wash, optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until just combined.
- Fold in the chopped strawberries gently.
- Turn the dough onto a lightly floured surface and pat it into a circle about 1 inch thick.
- Cut into triangles or rounds.
- Place scones on a baking sheet lined with parchment paper.
- Brush the tops with beaten egg if desired.
- Bake for 15-20 minutes or until lightly golden.
- Allow to cool slightly before serving.

Make-ahead: Prepare dough the night before and refrigerate. Baking can be done fresh in the morning.
