Description

Indulge in soft, warm cookies filled with creamy Biscoff cookie butter for a delightful treat that balances sweetness and spice.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup white chocolate chips (optional)
  • ½ cup Biscoff cookie butter (slightly chilled)

Instructions

  1. Scoop teaspoons of Biscoff cookie butter onto a parchment-lined tray and freeze for at least 30 minutes.
  2. In a stand mixer, cream together butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt before gradually adding to the wet mixture.
  4. Fold in white chocolate chips if using.
  5. Scoop dough, flatten slightly, add a frozen cookie butter ball, and wrap the dough around it, sealing properly.
  6. Preheat oven to 350°F (175°C) and bake cookies for 10-12 minutes until edges are golden and centers are soft.
  7. Cool on tray for 5 minutes before serving warm.

Notes
