- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup white chocolate chips (optional)
- ½ cup Biscoff cookie butter (slightly chilled)
Instructions
- Scoop teaspoons of Biscoff cookie butter onto a parchment-lined tray and freeze for at least 30 minutes.
- In a stand mixer, cream together butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla.
- In another bowl, whisk together flour, baking soda, baking powder, and salt before gradually adding to the wet mixture.
- Fold in white chocolate chips if using.
- Scoop dough, flatten slightly, add a frozen cookie butter ball, and wrap the dough around it, sealing properly.
- Preheat oven to 350°F (175°C) and bake cookies for 10-12 minutes until edges are golden and centers are soft.
- Cool on tray for 5 minutes before serving warm.
