Description

A delicious and comforting Sweet Potato Casserole topped with a crunchy pecan and brown sugar topping, perfect for holiday gatherings.


Ingredients

  • 4 cups mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
  3. Transfer the sweet potato mixture to a greased baking dish.
  4. In a separate bowl, mix the chopped pecans with a little brown sugar and sprinkle over the sweet potato mixture.
  5. If desired, add mini marshmallows on top.
  6. Bake in the preheated oven for 30-35 minutes, or until heated through and the topping is golden brown.
  7. Let cool slightly before serving.

Notes

  • For a vegan version, substitute eggs with flax eggs and use plant-based milk and butter.
  • Can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to adjust the sweetness by adding more or less brown sugar.
