- 4 Chicken Breasts, boneless and skinless
- 4 oz Goat Cheese
- 1 Cup Fresh Spinach
- 1 Tablespoon Olive Oil
- Salt and Pepper to Taste
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice each chicken breast down the middle, creating a pocket.
- In a mixing bowl, combine the goat cheese and fresh spinach until well-mixed and creamy.
- Generously stuff the pocket of each chicken breast with the goat cheese and spinach mixture.
- Brush the outside of the stuffed chicken with olive oil and season with salt, pepper, garlic powder, and paprika.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes.
- Let the chicken rest for 5 minutes before serving.
