- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup milk

- 1/4 cup espresso, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- Cocoa powder for dusting
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream the softened butter and sugar in a large bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Divide the batter among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Let the cupcakes cool completely on a wire rack.
- Mix the cooled espresso and coffee liqueur, poke holes in the cupcakes, and drizzle over the mixture.
- Beat mascarpone, heavy cream, and powdered sugar until stiff peaks form.
- Frost the cooled cupcakes and dust with cocoa powder before serving.
Notes
These cupcakes can be made a day in advance; just add frosting before serving. Use decaf espresso if you prefer.
