Description

Decadent Tiramisu Cupcakes infused with coffee and topped with creamy mascarpone frosting, perfect for any celebration.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream the softened butter and sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the milk and vanilla until well combined.
  6. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  7. Divide the batter among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Let the cupcakes cool completely on a wire rack.
  10. Mix the cooled espresso and coffee liqueur, poke holes in the cupcakes, and drizzle over the mixture.
  11. Beat mascarpone, heavy cream, and powdered sugar until stiff peaks form.
  12. Frost the cooled cupcakes and dust with cocoa powder before serving.

Notes

These cupcakes can be made a day in advance; just add frosting before serving. Use decaf espresso if you prefer.
