Ingredients

- 1 cup white chocolate chips
- 1/2 cup heavy cream
- 1/2 teaspoon peppermint extract
- 1/4 cup crushed peppermint candies
- 1/2 cup crushed graham crackers
- 1/4 cup cocoa powder
Instructions
- In a saucepan, heat the heavy cream until it begins to simmer.
- Remove from heat and add the white chocolate chips, stirring until melted and smooth.
- Stir in the peppermint extract and crushed peppermint candies.
- Chill the mixture in the refrigerator for about 1 hour until firm.
- Once firm, scoop out small portions and roll them into balls.
- Roll the truffles in crushed graham crackers and cocoa powder.
- Place the truffles in mini cupcake liners and refrigerate until ready to serve.
Notes
- For a stronger peppermint flavor, increase the amount of peppermint extract.
- Store truffles in an airtight container in the refrigerator.
- These truffles can be made ahead of time and stored for up to a week.
