- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1 egg
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 can cream of mushroom soup
- 1 cup frozen mixed vegetables
- 1 cup mashed potatoes
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine ground beef, breadcrumbs, onion, egg, garlic powder, salt, and pepper. Mix well and form into patties.
- In a skillet, brown the patties on both sides over medium heat.
- In a separate bowl, mix beef broth and cream of mushroom soup until well combined.
- In a baking dish, place the browned patties and pour the soup mixture over them.
- Add the frozen mixed vegetables on top.
- Spread the mashed potatoes over the top of the mixture.
- Bake in the preheated oven for 30-35 minutes, or until heated through and bubbly.
Notes
- Feel free to add your favorite vegetables to the dish.
- For a spicier kick, add some hot sauce to the gravy mixture.
- This dish can be made ahead of time and stored in the refrigerator before baking.
