Description

A vibrant dish that marries health with indulgence, featuring tender chicken, aromatic spices, and fluffy rice.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 cup jasmine or basmati rice, rinsed
  • 2 cups low sodium chicken broth
  • 2 cups fresh spinach
  • Juice of ½ lemon
  • Salt and black pepper, to taste
  • 2 tbsp Greek yogurt for serving (optional)

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Cook the chicken pieces until lightly browned, about 5-7 minutes.
  3. Add the onion, garlic, and ginger, stirring for 2-3 minutes until softened.
  4. Embrace the spices by adding turmeric, paprika, salt, and pepper, and coat the chicken.
  5. Incorporate the rinsed rice, mixing well to absorb flavors.
  6. Pour in the chicken broth and bring to a boil.
  7. Cover and reduce heat to low, simmering for about 15 minutes until rice is tender.
  8. Stir in the fresh spinach until wilted.
  9. Finish with lemon juice, adjusting seasoning as necessary.
  10. Serve with Greek yogurt on top if desired.
