- 2 medium apples, peeled and diced
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 flour tortillas
- 2 tablespoons cream cheese or vanilla yogurt (optional)
- 1 teaspoon powdered sugar (optional for garnish)
Instructions
- Start by peeling and dicing the apples into small cubes, ensuring even cooking.
- In a skillet over medium heat, melt the butter until it starts to bubble slightly.
- Add in the diced apples, brown sugar, and cinnamon. Cook for 6–8 minutes, stirring gently until the apples soften and become beautifully coated.
- Stir in the vanilla extract and remove the skillet from heat.
- Lay a tortilla flat on a clean surface. Spoon the warm apple mixture on one half of the tortilla. Add cream cheese or yogurt if desired.
- Fold the tortilla over to close it, pressing lightly to seal in the filling.
- In a clean skillet, melt a bit of butter over medium heat, and carefully place the folded tortilla into the pan.
- Cook for 2–3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet, slice into wedges, and garnish with powdered sugar if desired. Serve warm.
Notes
Make-ahead: Prepare the apple filling the night before. You can also bake the quesadillas at 375°F (190°C) for about 10 minutes for a healthier option.
