Description

A cozy breakfast treat made with juicy apples, sweet brown sugar, and aromatic cinnamon, enveloped in a golden, crispy tortilla.

Ingredients

Scale
  • 2 medium apples, peeled and diced
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 flour tortillas
  • 2 tablespoons cream cheese or vanilla yogurt (optional)
  • 1 teaspoon powdered sugar (optional for garnish)

Instructions

  1. Start by peeling and dicing the apples into small cubes, ensuring even cooking.
  2. In a skillet over medium heat, melt the butter until it starts to bubble slightly.
  3. Add in the diced apples, brown sugar, and cinnamon. Cook for 6–8 minutes, stirring gently until the apples soften and become beautifully coated.
  4. Stir in the vanilla extract and remove the skillet from heat.
  5. Lay a tortilla flat on a clean surface. Spoon the warm apple mixture on one half of the tortilla. Add cream cheese or yogurt if desired.
  6. Fold the tortilla over to close it, pressing lightly to seal in the filling.
  7. In a clean skillet, melt a bit of butter over medium heat, and carefully place the folded tortilla into the pan.
  8. Cook for 2–3 minutes on each side, or until golden brown and crispy.
  9. Remove from the skillet, slice into wedges, and garnish with powdered sugar if desired. Serve warm.

Notes

Make-ahead: Prepare the apple filling the night before. You can also bake the quesadillas at 375°F (190°C) for about 10 minutes for a healthier option.
