Description

Ingredients

  • 6 oz Feta Cheese
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Bell Pepper, diced
  • 2 cups Fresh Spinach
  • 4 Eggs
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • Herbs (optional, e.g., basil or thyme)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Add a layer of fresh spinach into each ramekin.
  3. Slice cherry tomatoes and red bell pepper, distributing them evenly among the ramekins.
  4. Crumble feta cheese over the vegetables.
  5. Crack an egg on top of each ramekin.
  6. Drizzle with olive oil and season with salt, pepper, and herbs if desired.
  7. Bake for about 20-25 minutes or until eggs are set to your liking.
  8. Remove from the oven and serve warm.
