- 3 ripe bananas, mashed
- 1 cup blueberries (fresh or frozen)
- 1/3 cup melted butter
- 1 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine the mashed bananas and melted butter until smooth.
- Add sugar, beaten egg, and vanilla extract; mix well.
- Sprinkle baking soda and salt over the mixture; stir gently to combine.
- Gradually add flour, folding it in with a spatula.
- Fold in the blueberries with care.
- Pour the batter into the prepared loaf pan.
- Bake in the oven for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For best results, use overripe bananas and avoid overmixing the batter.
