- 2 ripe bananas
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Oil for frying
Instructions
- Mash the bananas in a mixing bowl until smooth with a few lumps.
- Combine the flour, sugar, baking powder, cinnamon, milk, and vanilla extract with the mashed bananas until a thick batter forms.
- Heat enough oil in a skillet over medium heat to submerge the fritters halfway.
- Drop spoonfuls of the batter into the hot oil, frying for about 2-3 minutes on each side until golden brown.
- Use a slotted spoon to remove the fritters and drain them on paper towels.
- Serve warm, optionally dusted with powdered sugar.
Notes
For added sweetness, consider serving with maple syrup or ice cream. Customize with chocolate chips or nuts if desired.
